From Ainsley Harriott's Low Fat Meals in Minutes
Ingredients
- 2 tablespoons vegetable oil
- 1 onion, sliced
- 1 red pepper, cored, seeded and sliced
- 1 garlic clove, crushed
- 200g long grain rice
- 175g lean, smoked ham, roughly diced
- 900ml chicken or vegetable stock
- half a teaspoon each of paprika and ground tumeric
- a few saffron strands
- 100g large prawns, thawed if frozen
- 100g frozen peas
- salt and freshly ground pepper
Method
- Heat the oil in a large frying pan and cook the onion for 3-4 minutes until softened and golden
- Add the red pepper, garlic and rice and stir fry for 1 minute
- Add the ham, stock, paprika, turmeric and saffron, bring to the boil and simmer for 12 minutes
- Stir in the prawns and peas and cook for a further 3-4 minutes, until the rice and vegetables are tender
- Season to taste then serve immediately
